If I open say a 90 day notice account today, could I give notice the next day, withdraw the money on day 91 and still get 91 days interest? Searched online but couldn't find a steer on this point.

Yes, but if it's an annual interest account you'll either have to give a "withdraw and close" instruction on that next day or wait until the anniversary for the interest to become credited -- and then a further 90 days to withdraw it....
