Cooked chickpeas

I'm going through our cupboards using up stuff that's been around for years, and today was chickpea day - dried chickpeas.

So Ive soaked them for a couple of overnights, and boiled them with some bicarb.

I now have a considerable amount of well cooked yummy scrummy chickpeas.

One dish i will be making will be a chickpea and spinach curry, and hummus. (Can;t make faalfels as the CPs are cooked - it falls apart)

What would YOU cook with pre-cooked chickpeas other than those?

It did strike me that one could mash them into a paste and almost griddle/dry (ish) fry them intoa sort of pancake ... opiunions?

Freeze 'em and use them in next week's curry. I always cook to many; onion/garlic/tin tomatoes/frozen chickpeas/frozen spinach/spices: instant dinner.

Did you save the water? Aquafaba is the new ingredient I've been meaning to try eg https://www.bbcgoodfood.com/recipes/vegan-meringues
I do chick pea fritters, soften some onions, mash the chick peas or lightly process, add both to beaten eggs and flour to bind to thick batter consistency, shallow fry.

Can't help I'm afraid. When I soak a batch of chickpeas then (after setting some aside for falafel) I use the rest for hummus and curry (usually with spinach. :)
