There's an interesting Guardian article today, where a wide range of chefs have sent in their favourite 'three-ingredient' recipes.
Many of them look simple and interesting, and with 50 listed there hopefully might be something that readers here might fancy giving a go with all this time on our hands..
Most easy recipes are not easy. Achieving simplicity is never actually that simple, but in the kitchen it is usually also contingent on a well-trained hand and a very well-stocked pantry. This makes the genuinely easy three-ingredient recipe a holy grail of sorts.
Here, then, the mother lode: 50 three-ingredient beauties. Some are meals in themselves. Some are a good base to build upon. Others still are a sweet something for afters. They run the gamut from “blink and it’s ready” to a long, slow cook, but none will break the bank. Crucially, all use only three things other than oil, butter, salt, pepper and water. As simple as ready, steady … cook!

Those Puff-pastry pizza's look delicious, and I do like the look of the aubergines with miso and honey!

Howbout three-colour recipes?
Like the Italian Insalata Tricolore (tomato, avocado, mozarella) - the colours of their flag. Or in approximately the same colours though not a 'standard' dish, my leek, tomato and chickpea soup. Or again in those colours, the kind of pub dessert that gives you a small ice cream with a strawberry and a leaf of mint?

OK.
Puff pastry, roll into a rectangle 20cm x 10cm x 1cm (actually a cuboid I suppose). 2cm in from the edges score a line but don't cut through, clean and trim spring onions and lay head to toe across the pastry one layer thick, add chunks of with feta, grind of pepper and drizzle of oil bake in a hot oven for 15 mins or until the edges have risen and the feta just colours.
