Anyone have a tried and tested recipe for baps/buns? We tried one in our panny recipe book and although the baps tasted good I found them rather heavy and stodgy. Light and tasty rather than ice hockey pucks is what I'm looking for.

Was your first and 2nd prove successful? Is your yeast fresh? I usually used a good housekeeping bread recipe and I've made the odd house brick with out of date yeast. In fact after the 2nd or 3rd failing I started making a yeast starter to check for life.

All successful and yeast was fine. The baps tasted good it was just that I found them rather stodgy. The recipe included an egg and I wondered if milk might be preferable. Will have to experiment some more.

Depending on where you live, the water quality can be a key factor.

When I use the breadmaker, I always use the ultra cheap 20p bottled water from the local supermarket.

It makes a huge difference. When I enter my 'bread machine' loaf into the local county show, my loaf has usually risen 25% higher than the competition and I win first prize.
