Quick and easy chicken recipe

I do love cream sauces...
pan fry slices of chicken breast, onion, mushrooms. Pepper, thyme, garlic. Splash of white wine. Chicken stock, reduce. Double cream, reduce until thickens. Loads of tarragon.

An even easier though less engaging recipe is to take a 1/2 sized can of condensed Campbells soup and use it as you would a cook-in sauce. I've used Cream of mushroom and it works pretty well for a quick/simple meal.

Well, there's quick+easy and then sophisticated+simplified. I know I was pushing it there, but some 'cheats' do make sense within the context of the desired end result and target audience. For example: I use a Barilla veg ragu sauce as a base in lasagne. Come to think of it my wife has just acquired two cans of Carnation condensed milk that's been pre-boiled for x-hours to form the caramel for Banoffee pie; and if it saves that bother then great!

So hungry I had to fry a duck egg. This weekend I am trying to nail Nando's chicken, I will buy a whole chicken for each day (3 chickens), spatchcock them and marinate in:
oil
wine vinegar
salt
lemon juice
garlic
thyme
oregano
peri peri chili
smoked paprika

blitz the marinade until very smooth. place the marinated chicken onto some root vegetables on an oven casserole dish.

Side dish, spicy rice: fry chopped onion, green and red pepper in oil, add spice mix (cumin, smoked paprika, curry powder, salt, oregano, thyme), add long grain rice, chicken stock - make it all very "fluffy".

First leg eaten, I was wolfing it down, even got some greasy meat on my specs. I'm such a spaz.

too mild, needs more piri-piri. I liked how the root veggies soaked up the oily spiciness, a nice side dish - one pot cooking. The flesh was coming apart, very tender and moist, the rice was just a side show as I was craving for some meat, albeit white.

I will make the adjustment for tomorrow's 2 of 3 chickens.
