Brown sauce needs tamarinds. If it doesn't have tamarinds in it, it shouldn't be called brown sauce.

According to my eldest son, who is in the restaurant business, there is not a great margin on steaks. If you go into a restaurant and order a plain steak and a glass of water, they won't like you very much.
Restaurants make more money on starters, desserts and drinks than on main courses. The highest margin item (i.e. the worst deal for the diner) is pizza where the profit margin can be over 90%. Which might explain why there are so many pizza joints on every high street.

A 1972 wine will probably sell for more than a 1972 steak
