It might be easier for me to write a letter on a tablet type device, maybe like a Remarkable, to create text in a document on a pc. I would want to use a usb lead and have the text appear as I write it with no need for an external website.
Any ideas on what might work please?
Any comments about how sensible this might be, whether or not there are better alternatives?

I've occasionally had to sign online documents using my tablet touchscreen, and the signature had no resemblence to my real signature. This was using a Samsung S-pen which has a fine point. I think the smooth slippy surface was not conducive to good handwriting.
I would think a speech-to-text application might be better for you.

Something like a Wacom Bamboo will allow you to do the input, I think. They do various combinations of slates and styli.

If you are using Microsoft Office consider its OneNote

that can work with a touch screen device or a tablet input (such as Wacom)
There are also hybrid devices that work with paper
I had a Bamboo Folio (it was more or less being given away at AldI) which was a novelty for a while
