The excellent ballet must be recorded before the New Year concert. Is the music live (from the concert hall) with the conductor (say) watching a video to keep the orchestra in time with the ballet? Or is the whole thing (music and ballet) recorded beforehand? In that case, is the recording displayed to the audience in the hall at the same time as it is broadcast?

Yes the music to the 2 ballet sections is played live in the hall and that is what we hear on TV or Radio. There is no big screen in the golden hall so the punters don't see it, nor do they see the other filmed sections while the music is played to them.
You can see the orchestra start playing at the start of the ballet sequences at 1h20m and 2h00m into the programme - still available on player until the end of the month -

Very many thanks for your reply and link. I still have one question: If we at home are seeing the recorded ballet and listening to the orchestra live, does the conductor have a discreet monitor showing the ballet dancers so that he can be sure to synchronise the live music with the recorded dancing? Or does the conductor have (say) precise timing throughout on his score at frequent intervals so that he knows whether he is in time with or ahead or behind the dancers?

It's possible there is some form of timing metronome, but I've never noticed such a thing and I suspect that they are just very good at keeping to the correct tempo through natural skill.

Very interesting - so some of the filmed sequences are indeed live sound from the hall with live event video and for some it is pre-recorded sound and vision, with live sound only for those in the hall.
