I've been trying to find some mild cajun spice but am having no luck. Can anyone recommend a seller, preferably online or a recipe for making your own so that I can control the heat? We bought a Schwartz blend but it's way too hot for OH, he likes mild spicy food not blow your head off. I wanted it to make cajun tortillas but those produced today were definitely too hot.

Why not dilute it down with some of the less spicy ingredients? From Googling, candidates might be garlic powder, oregano or thyme.

Google Seasoned Pioneers. They have a huge selection of spices. The trouble for me is that I live alone and even small quantities last me well past their best by date.
Otherwise make your own Cajun Spice, equal quantities of each.
Smoked paprika
Cayenne pepper (only a small amount; this is hot)
Ground coriander
Dried Oregano
Ground Cumin
Black Pepper
Salt to taste
This is very good I find.

Thanks Dod we've got all the infredients except the cayenne pepper but OH has suggested we just use a tiny amount of the hot cajun spice we've got instead. We'll give it a go tomorrow.

Down here in S.E. Loosiana, we have quite a number of Cajun or, more accurately called, “Creole seasoning” brands for sale on the local supermarkets. My favorite is Tony Chachere’s “More Spice Creole Seasoning”, which is similar to his original mixture (See; https://www.tonychachere.com/Original-C ... P1268.aspx) but has less salt and more udder stuff in it. Since I can buy it locally, I don’t make my own, however I do use it as a base in my rib & butt rub mixture adding more black pepper, garlic & onion powder, sugar, etc.
Doing a search online for “Cajun Spice Mixtures” I found this one to be fairly close to Tony’s recipe (See; https://www.epicurious.com/recipes/food ... mix-368289), which would probably be too “hot” for your taste. That being the case, I would substitute sweet paprika for some or even most of the cayenne (hot!) pepper.
